I just put this together and it's simmering and it smells and tastes SOOO

Pizza Soup

 

Recipe By : Adapted from Betty Crocker Meatless Main Dishes

Amount Measure Ingredient -- Preparation Method

Vegetable Cooking Spray

1 Medium Onion -- sliced

1 Large Red Bell Pepper -- diced

1 Large Green Bell Pepper -- diced

3 Cloves Garlic -- minced

2 Cups Water

2 14 Oz Cans Whole Tomatoes -- undrained

1 6 Oz Can Tomato Paste

4 Oz Fresh Mushrooms -- sliced

1 1/2 Tsp Italian Seasoning

1 Tsp Fennel

1 15 Oz Can Kidney Beans -- rinse/drain

1 15 Oz Can Chickpeas -- rinse/drain

6 Slices French Bread -- sliced 1/2 " thick

1 1/2 Cups Shredded Mozzarella Cheese

 

1. Spray a nonstick Dutch oven with vegetable cooking spray and over

medium heat saute the onion slices, diced red and green bell peppers and

garlic, stirring until onion is tender.Add the water, tomatoes which have

been chopped up and tomato paste. Mix well.

2. Stir in remaining ingredients except for the bread and cheese. Heat to

boiling and then reduce heat to a simmer, stirring occasionally for 10

minutes.

3. Just before serving, heat oven to 425 degrees. Place bread on an

ungreased cookie sheet and toast the bread for approximately 6 minutes,

turning once, until golden brown.

4. Turn oven to the broil setting. Pour the hot soup into 6 ovenware soup

bowls or casserole dishes. Top each with slice of toast and sprinkle with

mozzarella. Broil with top of soup dishes 3-4 inches from heat for 1-2

minutes or until cheese is melted.
