Brenda asked for some carrot recipes. These are some fast fixing, easy

recipes I found on www.cook-book.com. They are sample recipes from a

cookbook that is not vegetarian. I do have a carrot cookbook somewhere

and will post some recipes from it, if I can find it.

Grilled Carrots and Hot Peppers

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

8 baby carrots

1/4 whole hot pepper -- seeded

1 teaspoon butter

sprinkle of sugar, salt & pepper

 

Place the baby carrots on 2 pieces of foil. Add pepper and butter to

each packet. Sprinkle with sugar, salt, and pepper. Seal packets

tightly.

 

Grill 20 to 25 minutes, turning every 10 minutes. Serves 2.

Onion Toss (Carrots)

3 cups carrots -- sliced

1 tablespoon butter

2 green onions -- sliced

1/4 teaspoon mace

 

Cook sliced carrots until tender-crisp, 5 minutes. Drain and toss with

butter, green onions, and mace. Serves 6.

Orange Saute (Carrots)

1/2 cup orange juice

1 tablespoon butter

1 tablespoon brown sugar

1/4 cup golden raisins

 

Cook grated carrots in orange juice, butter, brown sugar and raisines,

uncovered, until most of the liquid evaporates. Stir often. Serves 2.

Roasted Ginger Carrots

Amount Measure Ingredient -- Preparation Method

1 pound baby carrots

1/2 cup orange juice

2 tablespoons fresh ginger -- grated

pinch salt

 

Combine the 1 pound baby carrots (about 2 cups), orange juice, fresh

ginger, and pinch of salt in a pie plate.

 

Roast uncovered, at 375° F for 30 minutes. Serves 4.

Tangy Cumin Carrots

2 cups carrots -- thinly sliced

1/2 cup orange juice

2 teaspoons butter

1/2 teaspoon cumin

or pinch dried dillweed

 

Heat carrots with orange juice, butter, and cumin (or dillweed).. Cover

and simmer, stirring often, until carrots are tender-crisp, 8 to 10

minutes. Serves 4.
