I borrowed " Lean Italian Meatless Meals " , by Anne Casale, from the public library awhile ago, and saved the recipes that appealed to me. Here are a couple samples. There are a lot of unusual vegetable and biscotti recipes. Let me know if you'd like to see them. Ellen C. * Exported from MasterCook Mac * Asparagus and Yellow Pepper Risotto Recipe By : Lean Italian Meatless Meals, Anne Casale Serving Size : 1 Preparation Time :0:00 Categories : Rice Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/4 pounds asparagus 5 cups vegetable broth 1 large yellow bell pepper -- in 1 " strips 2 teaspoons olive oil 1/3 cup minced onion 1/4 cup celery -- finely chopped 1/2 cup dry white wine -- defrosted 1 1/3 cups arborio rice 1/4 teaspoon salt 1/4 teaspoon black pepper 1/4 cup fresh chives -- snipped; for garnish 8 teaspoons asiago Cheese Saute the onions and celery in the oil. Cook the risotto with the broth and wine. Steam the asparagus and yellow bell pepper until tender. Add them to the finished risotto before serving. - - - - - - - - - - - - - - - - - - _____ * Exported from MasterCook Mac * Baked Rice with Ricotta Recipe By : Lean Italian Meatless Meals, Anne Casale Serving Size : 1 Preparation Time :0:00 Categories : Rice Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/2 cups arborio rice -- or long grain rice 1/2 cup egg beaters® 99% egg substitute 1 3/4 cups skim milk 1/4 cup parmesan cheese 1 cup part-skim ricotta cheese 1/4 cup italian parsley -- minced 1/2 teaspoon salt 1/2 teaspoon white pepper Cook rice in 4 quarts boiling water until barely tender, about 7 minutes. Transfer to a mesh strainer and cool to room temp. Preheat overn to 350F. Greas a 9x13x2-inch baking dish. Whish egg stubstitute and milk. Add the cheeses and seasonings. Stir in rice and mix well. pour into prepared pan. Cover with parchment papter. Cover that with aluminum foil. Bake in oven until a knife inserted in center comes out clean, about 40-45 minutes. Remove from oven; discard foil and parchment paper. Broild for 2-3 minutes until light golden. Let rest for 10 minutes before slicing into squares to serve. - - - - - - - - - - - - - - - - - - _____ * Exported from MasterCook Mac * Broccoli with Caramelized Onion Pizza Recipe By : Lean Italian Meatless Meals, Anne Casale Serving Size : 1 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- Pizza dough 2 cups spanish onions -- thinly sliced 2/3 cup vegetable broth 4 cups broccoli florets -- bite-sized pieces - with 1/4 inch stems included 1 1/2 teaspoons cornmeal -- for dusting board 1 tablespoon extra virgin olive oil 1/2 teaspoon salt 1/2 teaspoon crushed red pepper 1 1/2 tablespoons fresh sage -- minced - or 1 1/2 tsp crumbled dried sage 1/3 cup grated parmesan cheese Cook onions in broth over medium heat, until onions start to turn a deep golden color and no liquid is left in bottom of pan, about 7-8 minutes. Cook broccoli until barely tender. (Steamed for about 4 minutes.) Distrbiute onions over pizza dough. Add broccoli florets. Drizzle oil over top. Sprinkle on salt, red pepper, sage, and cheese.
