I've done that for years and years. I save them in a ziploc bag and

freeze them and when I am ready to make stock, I have goodies for the

pot. I thaw them out, dry them up a bit, and saute them until the onions

get a little soft and then I add the water. You can also dry them out

and roast them with some other veggies and make a darker stock that way.

 

But yes, it does work.
