Combine half the minced peppers, vinegar, honey, salt, and black pepper in a blender. Process until serrano pepper has been fully blended. With machine running, add olive oil until combined and mixture is thick. Then add tofu a little at a time and blend until smooth. Non-silken tofu must blend a long time to get smooth enough to remove the " grainy " feel. - - - - - - - - - - - - - - - - - - NOTES : I'd use soft tofu, or even silken might be better, even though that's not what the recipe calls for.
