Serrano Vinaigrette

2 serrano peppers -- seeded & deveined

6 tablespoons red wine vinegar

1 tablespoon honey

3/4 teaspoon salt

1/4 teaspoon freshly ground pepper

9 tablespoons extra virgin olive oil

 

Mince the serrano peppers. Combine half the minced peppers, vinegar,

honey, salt, and black pepper in a blender. Process until serrano pepper has

been fully blended. With machine running, add olive oil until combined and

mixture is thick. Use the remaining serrano pepper as a garnish.

Soy Sesame Dressing

1/2 cup canola oil

1/4 cup soy sauce

1/4 cup rice wine vinegar

1/4 cup sesame oil

1/4 cup molasses

 

Place all ingredients in a bowl. Using an electric hand held mixer, mix

thoroughly until smooth.

Tamari Dressing

2 tablespoons olive oil

2 tablespoons rice vinegar

1/2 teaspoon mustard

1 teaspoon low-sodium tamari soy sauce

1/2 teaspoon sugar

 

Place all ingredients in a lidded jar. Close jar; shake thoroughly until

dressing thickens. Chill until ready to use. Shake again before using. Makes

1/4 cup.

Tarragon-Dijon Dressing

Amount Measure Ingredient -- Preparation Method

1/2 bunch fresh tarragon -- stemmed

1 teaspoon minced garlic

1 1/2 tablespoons Dijon mustard

1/2 teaspoon minced lemon zest

1/3 cup fresh lemon juice

1 teaspoon fresh ground black pepper

1/2 teaspoon green or pink peppercorns

2 teaspoons nutritional yeast

1 teaspoon sea salt

1/3 cup light olive oil

1/8 cup hazelnut or walnut oil

 

In a blender, combine all the ingredients except the oils. Add the olive oil

and blend. With the blender running, add the remaining oil.

 

Fat Free Alternative: Delete the salt and oils. Substitute 1 tbsp. light miso,

1/2 cup silken tofu, and 1/2 cup water.

Tofu Dressing

Amount Measure Ingredient -- Preparation Method

1/4 cup minced onion

2 cloves garlic -- minced

1 tablespoon minced fresh basil -- (or 3/4 tsp. dried)

1 1/3 cups light olive oil

1/2 cup cider vinegar

1/2 cup tamari soy sauce

1 pound tofu -- water pressed out

 

Blend everything but tofu in a blender or food processor. Then add tofu a

little at a time and blend until smooth. Non-silken tofu must blend a long time

to get smooth enough to remove the " grainy " feel.

NOTES : I'd use soft tofu, or even silken might be better, even though that's

not what the recipe calls for.
