Benihana Ginger Salad Dressing

Amount Measure Ingredient -- Preparation Method

1/2 cup minced onion

1/2 cup peanut oil

1/3 cup rice vinegar

2 tablespoons water

2 tablespoons minced fresh ginger

2 tablespoons minced celery

2 tablespoons ketchup

4 teaspoons soy sauce

2 teaspoons sugar

2 teaspoons lemon juice

1/2 teaspoon minced garlic

1/2 teaspoon salt

1/4 teaspoon black pepper

 

Combine all ingredients in a blender. Blend on high speed for about 30

seconds or until all of the ginger is well-pureed.

Makes 1 3/4 cups.

Cranberry Vinaigrette

1/4 cup cranberry juice drink concentrate

1 tablespoon white wine vinegar

2 teaspoons Dijon mustard

1/2 teaspoon dried thyme

1/4 cup olive oil

1/4 teaspoon freshly ground pepper

1/4 teaspoon salt

 

Process all ingredients in a blender until smooth, stopping to scrape down

sides. Serve with salad greens.

Olive Garden House Dressing

Amount Measure Ingredient -- Preparation Method

8 ounces Paul Newman's Vinegar and -- Oil Dressing

1 Garlic clove -peeled -halve

1/2 teaspoon Dried basil

1/2 teaspoon Dried oregano

3 packages Sweet and Low -- or 1 tablespoon Sugar

 

Put ingredients into the bottle of dressing and shake well. Refrigerate 24 hours

before using.

Roasted Veggie Dressing

Amount Measure Ingredient -- Preparation Method

1/4 cup balsamic vinegar

1 tablespoon Dijon mustard

1 clove garlic -- crushed

1 sprig fresh parsley -- minced

1 tablespoon fresh rosemary -- minced

1/2 cup extra virgin olive oil

 

Combine all ingredients except for olive oil in a bowl. Slowly whisk in

olive oil.

 

Makes 3/4 cup.

 

 

Serve on roasted vegetables, sandwiches, salads, etc.
