Guest guest Posted April 13, 1999 Report Share Posted April 13, 1999 Christine: These aren't casseroles, but kind of similar, since they are " loaves " : * Exported from MasterCook * Chick Pea Loaf Recipe By : Serving Size : 6 Preparation Time :0:00 Categories : Main Dishes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 c Chick peas 2 tb Vegetable oil 2 ea Garlic cloves, minced 1 lg Onion, chopped 2 ea Celery stalks, chopped 2 ea Carrots, finely chopped 1/4 c Tamari 1 t Cumin powder 1 ea Salt to taste 1/4 ts Turmeric 3 tb Tahini Place soaked chick peas in a pot & cook for 50 minutes to 1 hour, till soft. Drain, save the stock & mash well. Heat ol in large skillet & saute garlic & onions for 5 minutes. Add celery, carrot, tamari, 2 tsp parsley, cumin, salt & turmeric. Saute till vegetables are tender. Add to the mashed chick peas & mix well. Add the tahini & mix well. Place in a large baking pan or two small loaf pans & bake at 375F for 45 minutes. Serve with a salad & /or vegetables on the side. Gimme Lean (beef style) 1 medium onion -- chopped fine 2 cloves garlic -- crushed 2 tablespoons vegetarian Worcestershire sauce 2 tablespoons ketchup 2 tablespoons prepared brown mustard 2 eggs or equivalent egg substitute salt and pepper to taste Preheat oven to 350 degrees F. Combine all ingredients. Spread in a lightly greased loaf pan (9x5x4). Cook uncovered for approximately 45 minutes. Greenlee Serving Size : 6 Preparation Time :0:00 Categories : Beans & Rice Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups cooked lentils 6 slices bread, torn into small pieces 2 eggs (or substitute) 1 cup vegetable broth 2 tablespoons tomato paste 1/2 teaspoon dried basil 1/4 teaspoon garlic powder 1/2 teaspoon black pepper 1 teaspoon dried parsley 1 tablespoon olive oil 1/2 package dry Knorr Spring Vegetable soup mix 1/3 cup dry bread crumbs vegetarian gravy Put all the ingredients, except dry bread crumbs, into a large bowl and mix well. Pour into a greased loaf pan and bake at 400 for 40 minutes. After baking, sprinkle top with dry bread crumbs and continue baking another 10 minutes. Let sit for 10 minutes or so before serving. Top each serving with vegetarian gravy. - - - - - - - - - - - - - - - - - - * Exported from MasterCook * Vegetable Loaf Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Main Dishes Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 tb Vegetable oil 2 ea Garlic cloves, minced 1 lg Onion, diced 1 ea Green pepper, diced 2 ea Celery stalks, diced 2 ea Carrots, diced 1/2 lb Fresh mushrooms, sliced 2/3 c Tamari 1 ea Salt to taste, if needed 1 t Parsley 1/4 ts Cayenne pepper 4 lg Potatoes, boiled & mashed 1/4 c Soy milk 1/3 c Vegetable oil 3 tb Orange juice 1/2 ts Salt 1 1/2 c Whole wheat flour Heat oil in a skillet Add the garlic & onions & saute for 3 minutes. Add the carrots, celery, green peppers & mushrooms & continue to saute for 5 minutes. Season well with the herbs & spices, including the tamari. Combine the mashed potatoes with the soy milk. Add the saute to the potato mixture. In a bowl, combine the oil, orange juice & salt. Gradually add the flour til lthe texture is moist & pliable. Roll the dough out on a floured board. Place rolled dough in a rectangular casserole so that the edges flop over the sides. Spoon the vegetables into the centre of the dough. moisten the edges of the dough & seal into a loaf shape. Place on a cookie shhet or leave in the casserole, making sure that whatever you use is oiled to prevent sticking. Bake for 40 minutes at 375F. Serve with vegetables on the side, such as mashed turnip, peas or beans, & cabbage. Or whatever. These and the delicious casseroles will keep me busy for awhile.
