The Lorna Sass books are the best cookbooks I've found for learning how to use a pressure cooker. Do you already own one or are you planning to buy? I don't know how I got along without one! Dried (soaked) beans are cooked in 12 minutes at high pressure -- unsoaked beans in 20 minutes! Risotto takes about 5 minutes (with no stirring). Guest guest Posted April 16, 1999 Report Share Posted April 16, 1999 Karen and Candace, I don't have a pressure cooker yet, but I'm thinking of getting one. I posted some recipes, from Food & Wine I think, that sounded great. I'm all for quick and easy food. A lot of things want my wallet's attention right now, so I think I might wait until Fall when I think I would use it more for soups, stews and such. I'll keep my eye out for Sass' books.
