Here is one I found re-printed in Home Cooking, by Amy Coleman (PSB television show). It's actually by the American Heart Association's " Kid's Cookbook. " I haven't tried it, but I love SPICY and this looks good for adults even to my eyes! ) Brenda Adams * Exported from MasterCook Buster * Nutty Pineapple Nibbles (Stuffed Celery - AHA) Recipe By : Kid's Cookbook (American Heart Association) Serving Size : 10 Preparation Time : Categories : Spreads Appetizers Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 6 celery stalks 1/4 cup canned crushed pineapple -- drained 1/2 cup soft light cream cheese 2 tablespoons creamy peanut butter 1 tablespoon honey 1/4 cup raisins -- or dried fruit bits 1/4 teaspoon hot pepper sauce -- optional 3 tablespoons dry-roasted nuts -- finely crushed 1. Rinse the celery, them trim off the leafy parts, and cut into 10-inch pieces. 2. In a medium-sized bowl, combine the drained pineapple, cream cheese, peanut butter, and honey. Stir with a rubber spatula until well mixed. Stir in the raisins or fruit bits and hot sauce, if desired. 3. Using a table knife, fill the groove of each celery stalk with the cheese mixture.
