Oven Baked Seasoned Fries

Amount Measure Ingredient -- Preparation Method

1 1/2 pounds baking potatoes (about 7 medium), peeled -- cut into

thin strips

1 tablespoon canola oil

1/2 teaspoon garlic powder

1/4 teaspoon to 1/2 tsp. paprika (optional)

1/4 teaspoon salt

 

Preheat oven to 450 degrees F.

Combine oil and seasonings in a bowl and mix well. Add potatoes and toss

well to coat. Arrange potatoes in a single layer on a baking sheet. Bake for

15 to 20 minutes or until golden brown.

NOTES : Be sure to use baking potatoes (russet). Thin skinned potatoes, which

have a higher sugar content than baking potatoes, will burn on the outside

before the inside is cooked, resulting in soggy fries.

Potato Hash

Amount Measure Ingredient -- Preparation Method

3 large potatoes -- diced

1/4 cup vegetable broth

1 cup onion -- chopped

1 cup green pepper -- chopped

1 cup red pepper -- chopped

1 cup corn kernels

1 teaspoon thyme

1/2 teaspoon tarragon

salt & pepper -- to taste

oil or margarine

 

Parboil diced potatoes until tender, drain. In a large skillet, combine

stock, onion, and peppers. Cook over medium heat about 5 minutes. Add corn,

cook a few more mins. Add vegetables to potatoes and toss with thyme, tarragon,

salt & pepper . Wipe out skillet and heat oil or margarine. Add potato mixture

to skillet and cook until potatoes being to turn golden.

Potatoes Anna

3 lbs. small baking potatoes -- peeled & thinly sliced

1/2 cup butter or margarine -- melted

3/4 tsp salt

3/4 tsp pepper

fresh rosemary sprigs -- for garnish

 

Heat a greased 10-inch cast iron skillet in a 350 oven for 8 mins. or until

hot. Arrange one-third of potato slices in skillet and drizzle with one-third

of butter/margarine; sprinkle with 1/4 tsp. salt and 1/4 tsp. pepper. Repeat

layering procedure twice with remaining ingredients.

Bake at 350 for one hour; increase heat to 500; and bake 5-10 more mins. or

until browned. Invert onto a serving plate; garnish, if desired.

Ranch Roasted Potatoes

1 1 oz env Ranch dressing mix

2 pounds small red potatoes -- quartered

1/4 cup vegetable oil

 

Place potatoes in a large plastic bag. Add oil and toss to coat. Add

dressing mix and toss again to coat.

Bake on an ungreased baking pan at 450 degrees F for 30 minutes (turn every

10 minutes).

Rosemary Potatoes

Amount Measure Ingredient -- Preparation Method

1 medium onion -- thinly sliced

2 cloves garlic -- minced

1 tablespoon olive oil

4 cups peeled & diced potatoes

1 teaspoon seasoned salt

1/8 teaspoon freshly ground pepper

1/8 teaspoon grated lemon rind

4 ounces Cheddar cheese -- grated

1/4 cup fine dry breadcrumbs

1 tablespoon butter or margarine -- melted

1 teaspoon chopped fresh rosemary

 

Saute onion and garlic in hot oil in a large skillet until tender. Stir in

potato and next 3 ingredients. Spoon half of mixture into a lightly greased 1

1/2 quart round baking dish. Sprinkle with half the cheese. Repeat layers with

remaining potato mixture and cheese.

Stir together breadcrumbs, butter or margarine, and rosemary. Sprinkle

over top of the potato-cheese mixture.

Bake, covered, at 400 degrees F for 40 minutes. Uncover and bake 20 more

minutes or until potato is tender.
