These are all recipes that my stepsons either liked or were very close to liking (that other kids might like). They are *extremely* picky (don't like too many things mixed together, only like 1 bean, only like 2 vegetables, potatoes & lettuce--1 likes corn too, don't like *any* " fake meats " --if they know they're fake--ha!, etc.). Sometimes you have to be tricky: Change the names of foods, lie about what's in them, chop very finely, blend tofu to replace cheeses, sour cream, etc. I apologize for the " cheesiness " of these recipes, but these are the things that my stepsons like. You could try cutting the cheese down or even out in most recipes. I'll be curious how things turn out if you try any of these on them. Also, if you will tell me about specific things they like/dislike, I could look for more that suit their tastes more. Good luck!! * Exported from MasterCook * Baked Ziti Recipe By : Serving Size : 6 Preparation Time :0:00 Categories : Pasta Italian Quick & Easy Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 8 oz ziti pasta 3/4 cup light ricotta cheese 1 cup light Mozzarella cheese 1 3/4 cups spaghetti sauce 1/2 tsp dried basil 1/8 tsp pepper 1 tbsp Parmesan cheese -- grated Cook pasta according to package directions using minimum amount of cooking time given. Drain. Preheat oven to 375. Lightly oil a 1 1/2 qt. casserole or spray w/nonstick cooking spray. In a large bowl, combine ricotta cheese with HALF the mozzarella. Stir in HALF of the sauce, along with the basil and pepper. Add the cooked ziti and mix well. Spoon into prepared casserole. Spread the remaining sauce over the top of casserole then sprinkle with remaining Mozzarella and then the Parmesan cheese. Cover and bake 20 mins. Uncover and continue baking another 15 mins. - - - - - - - - - - - - - - - - - - * Exported from MasterCook * Bean & Cheese Chimichangas w/Guacamole Recipe By : Serving Size : 10 Preparation Time :0:00 Categories : Beans Mexican/Southwestern Rice Quick & Easy Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 16 oz. cans refried beans 2 cups cheddar or Monterey jack cheese -- grated 2/3 cup salsa 2 teaspoons ground cumin OR 2 tbsp. taco seasoning 1 pkg prepared Spanish rice (optional) 10 large flour tortillas 1 large avocado 2 teaspoons lime juice 1/4 teaspoon garlic -- minced 1/2 teaspoon salt 3 tablespoons salsa oil for frying (optional) sour cream for topping Preheat oven to 475. Combine beans, cheese, 2/3 cup salsa, and cumin or taco seasoning. Mix well. Spoon about 1/3 to 1/2 cup of the bean mixture into the center of a tortilla and add about 1/4 cup of prepared Spanish rice, if using. Fold up tortilla envelope fashion. Repeat with each tortilla. If frying, place tortillas seam side down in preheated oil and fry on each side until browned. After frying, bake in oven about 10 mins. If not frying, bake about 15 minutes. While baking, peel and cut avocado, place in small bowl and mash with a fork. Add lime juice, garlic, salt, and 3 tbsp. salsa and mix well. Add pinto beans and mix well. Add barbecue sauce and wheat germ, mix well, and cook until thoroughly heated. Place hot bean mixture on top of each slice of toast and then top with cheese slices and allow to melt somewhat. - - - - - - - - - - - - - - - - - - * Exported from MasterCook * Caribbean Bean Burgers Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Beans Sandwiches Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 15 oz. can Great northern beans -- rinsed & drained 1 cup plain bread crumbs 1/4 cup onion -- finely chopped 1 egg (or substitute) -- slightly beaten 3 tablespoons skim milk 1 clove garlic -- minced 1 teaspoon Jamaican jerk seasoning (dry spice blend) 1/4 teaspoon salt (optional) nonstick cooking spray 4 hamburger buns or 8 bread slices condiments of choice In a medium mixing bowl, mash beans with a fork or potato masher until smooth. Stir in remaining ingredients (except cooking spray, bread, and condiments, of course); mix well. Shape mixture into 4 patties about 4 " in diameter. Spray a nonstick skillet with nonstick cooking spray. Heat skillet over medium heat. Cook patties in skillet until browned, turning once, about 8 minutes. Serve on buns or bread with favorite condiments. - - - - - - - - - - - - - - - - - - * Exported from MasterCook * Cheesy Spaghetti Bake Recipe By : Serving Size : 10 Preparation Time :0:00 Categories : Pasta Quick & Easy Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/4 cup chopped onion 15 oz spaghetti sauce 12 oz spaghetti 2 tablespoons butter or margarine 4 teaspoons flour 2 tablespoons Parmesan cheese -- grated 3/4 cup evaporated milk 1/3 cup water 1 1/2 cups Velveeta cheese -- grated Cook spaghetti, drain, and mix with spaghetti sauce. While spaghetti is cooking, melt butter, add onion, and cook until onion is soft. Stir in flour and slowly add evaporated milk and then water, whisking constantly, cook over medium heat until thickened. Add 1/2 cup to 3/4 cup of Velveeta and Parmesan cheese. Stir until melted. Spread half of spaghetti mixture in the bottom of a 10x6x2 " baking dish or 8 " -9 " square baking dish. Spread half of cheese mixture and half of remaining half of Velveeta over this layer. Spread remaining spaghetti mixture on top, and then remaining cheese sauce and remaining Velveeta.
