Worcestershire sauce 1 teaspoon fresh basil -- chopped 1/4 teaspoon salt 1/4 teaspoon pepper 1/4 cup light Cheddar cheese (optional) -- finely shredded Place the peppers in a saucepan with boiling water just deep enough to cover for 2 minutes. Using a slotted spoon, remove and invert them onto a towel to drain. Meanwhile, preheat the oven to 375 degrees F. Lightly spray an unheated large skillet with nonstick cooking spray. Add the tofu and onions and cook over medium heat until the onions are cooked, about 5 minutes. Stir in the rice, tomatoes with juice, tomato paste, Worcestershire sauce, basil, salt, and pepper. Cover and simmer 10 minutes, stirring occasionally. Place the pepper halves in an 8x8-inch baking dish. Add rice and saute briefly. Stir in tomato sauce and spices. Heat through and serve. - - - - - - - - - - - - - - - - - - * Exported from MasterCook * Spanish Rice Casserole Recipe By : Mollie Katzen, " Moosewood Cookbook " Serving Size : 4 Preparation Time :1:15 Categories : Rice Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 cups cooked brown rice 2 pounds spinach -- chopped 1 cup chopped onion 2 cloves minced garlic 3 tablespoons butter 4 eggs -- beaten 1 cup milk 1 1/2 cups grated cheddar cheese 1/4 cup parsley -- chopped 2 tablespoons tamari soy sauce 1/2 teaspoon salt -- or to taste 1 dash nutmeg 1 dash cayenne 1/4 cup sunflower seeds paprika Saute onions and garlic with salt in butter. When onions are soft, add spinach. Cook 2 minutes. Combine with all ingredients except sunflower seeds and paprika. Spread into buttered casserole and sprinkle seeds and paprika on top.
