Guest guest Posted April 21, 1999 Report Share Posted April 21, 1999 Kathleen (and everyone else): I don't particularly like coconut milk (and have had it and cooked with it), so I use skim milk and I use a little bit of coconut extract in it to flavor it. I am sure you could do this with soy milk or Rice Dream too if you wanted to. I haven't tried that yet. If you don't boil it in the recipe, then it should work.
