RECIPES: pancakes and tofu

You'll probably think I eat weird things for breakfast, considering the fact

that my tofu recipe contains what other people eat for supper. That's okay;

I've been known to down a bowl of oatmeal for supper. Feel free to rename it

" tofu slab with stir-fry " if you want. Recipes are uncategorized so you can

pick your own classifications. BTW, you might, as did a friend of mine, expect

the pancakes to be bitter because they contain ONLY whole-wheat flour, but mine

are not. I do use Martha White flour, if that makes a difference.

Hearty breakfast

8 ounces sliced mushrooms

4 small onions -- chopped

1/2 cup chopped broccoli

poultry seasoning -- to taste

2 tablespoons olive oil -- divided

1 pound firm tofu -- in 8 slices

 

Heat 1 tablespoon oil in medium frying pan. Saute the onions until they begin

to soften; add the broccoli and stir until it is bright green; add the sliced

mushrooms and stir until crisp-tender. Meanwhile, heat the remaining 1

tablespoon oil on griddle; fry the tofu slices until browned on both sides. Top

with poultry seasoning. Place two slices on a plate; top with 1/4 of the

vegetables.

Whole Wheat Pancakes

1 cup whole wheat flour

1 cup water

2 tablespoons flax seeds -- ground

2 teaspoons baking powder

1 pinch salt

2 tablespoons canola oil

1/2 cup pecans -- chopped

 

Combine ground flax seeds and water; let stand 5 minutes. Meanwhile, stir

together flour, baking powder, and salt. Add the canola oil to the flax

seed-water mixture and stir into the flour mixture. Add pecans. Pour 1/8 cup

batter on hot, oiled griddle; bake until bubbles form and turn to bake the other

side.
