Guest guest Posted April 25, 1999 Report Share Posted April 25, 1999 * Exported from MasterCook II * Chilled Cantaloupe Soup Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Sharon Sassaman Claessens Soup The No Tofu Veg Cookbook Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 Large Ripe Cantaloupe, Chilled Dash Of Ground Cardamom Dash Of Ground Ginger 4 Whole Strawberries -- for garnish Mint Sprigs -- for garnish Peel and seed melon. Finely dice 1/2 cup of the flesh and set aside. Coarsely cube remaining melon. There should be about 5 cups. Put melon, cardamom and ginger into a blender or food processor and process until smooth. To serve, pour soup into individual bowl.
