Herbed Garlic Rigati With Fresh Tomatoes

Amount Measure Ingredient -- Preparation Method

1 1/2 Cups (About 1/4 Lb) Rigati Or Rigatoni Pasta

2 Garlic Cloves -- peeled

1 Thin Lemon Slice

1 Large Tomato

1 Tbs Minced Fresh Parsley

1 Tbs Minced Fresh Basil

1/4 Tsp Dried Marjoram -- crumbled

1 Tsp Extra-Virgin Olive Oil

Dash Salt

Dash Freshly Ground Pepper

 

Bring a large saucepan of water to a boil. Add pasta, garlic and lemon

slice and cook 8 to 10 minutes or until firm-tender.

Meanwhile, peel, seed and finely dice tomato. Combine in a bowl with the

parsley, basil and marjoram.

Drain pasta and turn into a warmed serving bowl. Remove lemon slice and

garlic cloves. Push garlic though a press into a small dish. Add garlic

and oil to tomato mixture.

Spoon tomato mixture over hot pasta and toss until ingredients are

combined. Season with salt and pepper. Serve hot or at room temperature.
