Guest guest Posted April 25, 1999 Report Share Posted April 25, 1999 * Exported from MasterCook II * Herbed Garlic Rigati With Fresh Tomatoes Recipe By : Susan Sassaman Claessens Serving Size : 2 Preparation Time :0:00 Categories : Pasta Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/2 Cups (About 1/4 Lb) Rigati Or Rigatoni Pasta 2 Garlic Cloves -- peeled 1 Thin Lemon Slice 1 Large Tomato 1 Tbs Minced Fresh Parsley 1 Tbs Minced Fresh Basil 1/4 Tsp Dried Marjoram -- crumbled 1 Tsp Extra-Virgin Olive Oil Dash Salt Dash Freshly Ground Pepper Bring a large saucepan of water to a boil. Add pasta, garlic and lemon slice and cook 8 to 10 minutes or until firm-tender. Meanwhile, peel, seed and finely dice tomato. Combine in a bowl with the parsley, basil and marjoram. Drain pasta and turn into a warmed serving bowl. Remove lemon slice and garlic cloves. Push garlic though a press into a small dish. Add garlic and oil to tomato mixture. Spoon tomato mixture over hot pasta and toss until ingredients are combined. Season with salt and pepper.
