Brenda Adams * Exported from MasterCook Buster * Orange-Basil Baked Tomatoes (Claessens) Recipe By : The No-Tofu Vegetarian Cookbook by Claessens, page 190 Serving Size : 4 Preparation Time 000 Categories : Tomatoes Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 large tomatoes -- garden ripe 1 clove garlic -- minced 1/4 teaspoon orange peel -- finely grated 1/2 tablespoon butter -- room temp. OR soy margarine 1 teaspoon basil leaves - thinly sliced Makes 4 servings. Preheat oven to 400 degrees F(205C). Halve tomatoes crosswise. Arrange them, cut side up, in a shallow casserole dish. Trim the blossom ends, if necessary, so they can stand flat. Stir the garlic and orange peel in to the butter. Spread the orange mixture equally over each tomato half. Bake 25 minutes. Sprinkle with basil, cover with foil and bake 10 minutes, or until tomatoes are tender.
