Blue Cheese Dressing (Madison)

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

6 tablespoons extra virgin olive oil

2 tablespoons sour cream -- or yogurt

5 teaspoons sherry vinegar

OR aged red wine vinegar

3 ounces blue cheese* -- crumbled

1 tablespoon snipped chives

salt and freshly ground pepper

 

*Maytag is a good choice for the blue cheese

 

Whisk all the ingredients in a bowl except the salt and pepper. Taste and

add salt if needed -- the cheese will be salty. Season with pepper.

 

Spoon over hearts of romaine or serve as a dip for crudites. Makes about

1/2 cup.
