Guest guest Posted April 27, 1999 Report Share Posted April 27, 1999 * Exported from MasterCook * My Favorite Pinto Beans Recipe By : adapted from " Stealth Health " Serving Size : 5 Preparation Time :0:00 Categories : Beans And Legumes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup dry pinto beans 1 (14 1/2 oz) can vegetable broth 1 1/2 cups water 1/8 teaspoon salt 1 (4-ounce) can diced green chili with liquid 1/2 cup shredded reduced-fat Cheddar cheese -- (2-ounces) 1/2 cup shredded reduced-fat Jack Cheese -- (2-ounces) In a large saucepan bring the beans, broth, and water to a boil. Add the green chili with liquid, reduce the heat, and cover. Simmer for 1 1/2 to 2 hours until the beans are tender. Using a portable hand blender or masher, puree or mash the beans until somewhat smooth yet lumpy. Add the Cheddar and Jack cheeses and stir until melted and thoroughly combined. Makes 5-1/2 cup servings. Try serving this over brown rice or rolling it into a burrito.
