Here are more from the McDougall Quick & Easy cookbook. * Exported from MasterCook II * Rotini and Greens Recipe By : McDougall Quick and Easy Serving Size : 4 Preparation Time :10:00 Categories : Fatfree Mcdougall Quick & Easy Pasta Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 8 ounces rotini or other spiral pasta 2 tablespoons soy sauce 2 tablespoons sherry 2 tablespoons water 1 tablespoon lemon juice 1 tablespoon honey 1 teaspoon cornstarch 1 large Maui or Vidalia onion, sliced -- separated into rings 1/4 cup water 10 ounces package mixed salad greens Put a large pot of water on to boil. Drop the pasta into boiling water and cook according to the package directions. Drain and rinse. Meanwhile, combine the soy sauce, sherry, 2 Tbspw ater, the lemon juice, honey and cornstarch in a bowl. Set aside. Place onion and 1/4 cup water in a nonstick frying pan. Cook, stirring occasionally for 5 minutes. Stir in the sauce mixture. Cook and stir until thickened. Remove from heat and add the pasta. Toss until well coated. Place the greens in a large bowl. Add the pasta mixture and toss to mix. - - - - - - - - - - - - - - - - - - * Exported from MasterCook II * Mushroom Stroganoff Mcd Recipe By : Mcdougall Quick and Easy Serving Size : 4 Preparation Time :10:00 Categories : Fatfree Mcdougall Quick & Easy Pasta Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 6 tablespoons white wine 1 onion -- chopped 1 pound sliced fresh mushrooms 2 tablespoons soy sauce 10 ounces lite silken tofu 1 tablespoon lemon juice 1/2 teaspoon Worcestershire sauce freshly ground black pepper -- to taste Place 3 tablespoons of the wine in a large frying pan. Add the onion and cook, stirring occasionally, for 3 minutes. Add the mushrooms, 2 Tbsp of teh wine, and the soy sauce. Cook, stirring frequently, for 5 minutes. Meanwhile, place the tofu in a food processor with the remaining 1 Tbsp wine and the lemon juice. Process until smooth. Pour into the pan with the mushrooms and onions. Mix well. Add the remaining ingredients and stir until heated through. Serve over pasta. - - - - - - - - - - - - - - - - - - * Exported from MasterCook II * Healthy Muffins Recipe By : McDougall Quick & Easy Serving Size : 18 Preparation Time :15:00 Categories : Breakfast Fatfree Mcdougall Quick & Easy Muffins Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/2 cups hot water or apple juice 1 cup applesauce 1/2 cup honey 1/2 cup raisins 1 cup unbleached white flour 1 cup whole wheat flour 1 cup oat bran 2 cups oatmeal 1 1/2 teaspoons baking soda 1 teaspoon cinnamon 1/2 teaspoon pumpkin pie spice Preheat oven to 350 degrees. Mix hot water, applesauce, honey, and raisins together and let rest for 10 minutes. Combine all the dry ingredients in a large bowl and mix well. Add the wet ingredients to the dry and mix. Do not overbeat. Pour into a nonstick muffin pan and bake for 35 minutes.
