Guest guest Posted April 28, 1999 Report Share Posted April 28, 1999 Here's the other recipe from the demonstration at the Cooking Light thing last weekend (not tried yet): * Exported from MasterCook * Tofu " Egg " Salad Recipe By : Chef Katherine Mathis, Hilton Head Health Institute Serving Size : 2 Preparation Time :0:00 Categories : " Post " Sandwiches Vegan Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 6 ounces lite firm tofu 2 tablespoons light mayonnaise -- (or vegan mayo) 1 teaspoon curry powder 2 teaspoons nutritional yeast 3 tablespoons finely chopped spinach 1 teaspoon minced green onion 1/4 teaspoon freshly ground black pepper 1 teaspoon finely chopped fresh parsley 1/2 teaspoon capers -- (optional) Place tofu in a small bowl and mash with a fork to create small chunks. Add remaining ingredients and stir. Chill for 1 to 2 hours or more to allow flavors to develop. Serving suggestions: Toast 2 slices of multigrain bread, top with 2 ounces of Tofu " Egg " Salad, slices of tomato, onion, lettuce, etc. OR serve on hamburger or sandwich buns.
