weekend (not tried yet):

Tofu " Egg " Salad

Vegan

 

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

6 ounces lite firm tofu

2 tablespoons light mayonnaise -- (or vegan mayo)

1 teaspoon curry powder

2 teaspoons nutritional yeast

3 tablespoons finely chopped spinach

1 teaspoon minced green onion

1/4 teaspoon freshly ground black pepper

1 teaspoon finely chopped fresh parsley

1/2 teaspoon capers -- (optional)

 

Place tofu in a small bowl and mash with a fork to create small chunks.

Add remaining ingredients and stir. Chill for 1 to 2 hours or more to allow

flavors to develop.

Serving suggestions: Toast 2 slices of multigrain bread, top with 2 ounces

of Tofu " Egg " Salad, slices of tomato, onion, lettuce, etc. OR serve on

hamburger or sandwich buns.

 

 

Per serving: 45 calories & 1.3 g fat
