Guest guest Posted April 28, 1999 Report Share Posted April 28, 1999 This is not from the cookbook of the week but I thought it looked good and it is from a book that I want: * Exported from MasterCook * Tofu Corn Chowder Recipe By : The Whole Soy Cookbook by Patricia Greenberg Serving Size : 6 Preparation Time :0:00 Categories : Soups & Stews Corn Soyfoods Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tbsp vegetable oil 1 lg white onions -- chopped 1 small red bell pepper -- chopped 1 small green bell pepper -- chopped 1 10 oz pkg frozen corn -- defrosted 2 cups vegetable stock 4 med red potatoes -- diced 1 1/2 cups soy milk 1 1/2 lb firm tofu -- cubed 1 tsp salt 1/2 tsp black pepper 1/2 cup chopped parsley Heat oil in medium saucepan over high heat and saute onion, peppers and corn until onions are translucent, about 5 minutes. Add vegetable stock and potatoes and bring to a boil. Reduce heat to simmer and cook for 15 minutes. Add soy milk and tofu and simemr another 15 minutes. Season with slat and pepper.
