This is from a pretty good book (but not Vegetarian, sorry) from Bob

Bowersox of QVC - In The Kitchen With Bob (BTW, I saw it at Borders the

other day for $5.99). Not a bad chili, wouldn't win any chili cook-offs

but it is pretty tasty.

Vegetarian Chili

 

Recipe By : Adapted from In The Kitchen With Bob by Bob Bowersox

4 lg onions -- chopped

1 lg green bell pepper -- seeded & chopped

3 tbsp oil

1 tbsp yellow mustard seeds

2 tbsp chili powder -- * see note

1 tsp cumin seeds

1 1/2 tsp unsweetened cocoa

1/4 tsp ground cinnamon

1 lb canned tomatoes -- crushed

1 6 oz can tomato paste

2 16 oz cans kidney beans -- undrained

1/2 cup water -- ** see note

salt -- to taste

4 dashes Tabasco sauce -- or more to taste

Limes -- cut into wedges

 

In a Dutch oven or large stockpot (I used my chicken fryer), saute the

onions and green pepper in oil over medium-high heat until onions are

browned, about 2-3 minutes. Add the mustard seeds and cook for 1 minute,

stirring constantly.

 

Add the chili powder, cumin seeds, cocoa, cinnamon, tomatoes, tomato

paste (and Better Than Bouillion chili base if using) and cook for 1-2

minutes. Add the kidney beans, water, coffee (if you decide to use it),

salt and Tabasco. Your work is now finished. Reduce heat and simmer

vigorously, uncovered, for about 40 minutes, or until the chili has

thickened. Stir frequently to prevent scorching.

 

Serve in heated bowls. Squeeze the juice of 1-2 lime wedges into the

chili just before serving.

NOTES : * I used 2 tbsp regular chili powder, 1/2 tbsp ancho powder and

1/2 tbsp chipotle powder.

** I used 2 tsp water and 1 tsp brewed coffee (I thought it would add

complexity to the flavoring of the chili)

I also used Better Than Bouillon's Chili Base and cut down on the

seasonings that Bob asked for.

 

I also garnished with a dollop of Friendship's Roasted Garlic Sour

Cream. Yum!
