Guest guest Posted April 30, 1999 Report Share Posted April 30, 1999 * Exported from MasterCook * South of the Border Wraps Recipe By : Betty Crocker's Cooking Basics Serving Size : 4 Preparation Time :0:00 Categories : " Post " Beans Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 8 oz can kidney beans -- rinsed & drained 1 8 oz can whole kernel corn -- drained 1 small bell pepper -- chopped 1/2 cup chunky-style salsa 1 tablespoon chopped fresh cilantro 4 flour tortillas -- (8 to 10 " size) 1/2 cup shredded Cheddar cheese Mix together beans, corn, bell pepper, and cilantro. Spread about 1/2 cup of the bean mixture over each tortilla to within 1-inch of edge. Sprinkle 2 tablespoons of cheese over each. Fold opposite sides of each tortilla up toward the center about 1-inch over the filling -- the sides will not meet in the center. Roll up tortilla, beginning at one of the open ends. Place wraps, seams sides down, in a microwavable dish.
