Red New Potatoes w/Fresh Chives

 

Recipe By : The No-Tofu Vegetarian Cookbook by Claessens, page 188

Serving Size : 4 Preparation Time :

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

1 1/2 pounds red potaotes -- small

(scrubbed)

3 cups vegetable broth

1 clove garlic -- peeled

1 bay leaf

1/3 cup mined fresh chives

1 dash salt

1 dash freshly ground pepper

 

Combine the potatoes, borth, garlic and bay leaf in a large saucepan and bring

toa boil. Reduce heat and simmer 15 mintues, or until potaotes are tender.

Add chives, then drain potatoes in a strainer. Place potatoes and chives in a

serving bowl and season with salt and pepper.

 

Makes 4 servings.
