Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound shell pasta 3 cups diced tomatoes 5 cloves garlic -- minced 15 Kalamata Olives -- pitted and sliced 1/4 cup fresh basil leaves some chopped and some left whole 1/4 cup olive oil 8 whole pepperoncini peppers -- (8 to 12) A standard in our home, this one is simple to make and gets better with time. 1 Combine tomatoes, garlic, olives, basil, olive oil, and pepperoncini peppers. Stir together, and allow to marinate as long as you have time for; overnight is best, although it's fine to eat right away too. 2 Cook pasta according to the package directions. Drain. Toss with uncooked sauce, and serve. Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/2 pounds fresh asparagus cut into 1 inch long pieces 1/4 cup chicken broth 1/2 pound fresh mushrooms -- sliced 8 ounces garlic-basil flavored angel hair pasta 1/2 cup grated Parmesan cheese olive oil cooking spray a sprinkling of red pepper flakes This is a great low-fat pasta dish. I serve it to company all the time. Serve with a fruit salad and French bread. 1 Cook pasta according to package instructions. 2 Coat a nonstick skillet with olive oil cooking spray. Saute asparagus in the pan over medium heat for about 3 minutes. Add chicken broth and mushroom slices; cook 3 minutes more. 3 Drain pasta, and transfer to a serving dish. Gently toss pasta with asparagus mixture, adding cheese and red pepper flakes. Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 16 ounces angel hair pasta -- (16 ounce) 4 cloves garlic -- minced 12 ounces frozen spinach -- defrosted olive oil A quick and easy dish. Cooked chicken pieces can be added to the skillet with the pasta. Broccoli can be substituted for the spinach. 1 Cook the pasta in a large pot of boiling salted water until al dente. Drain. 2 Heat oil in a large skillet. Add the garlic, and cook for 1 minute. Add the spinach and the cooked pasta. Mix well, and cook for approximately 2 minutes, stirring often. Serve. Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/4 cup vegetable oil 2 cups sliced fresh mushrooms 1 cup shredded carrots 1/2 cup green and/or red bell peppers -- cut into strips 1 onion -- chopped 2 cloves garlic -- minced 2 cups bean sprouts 1/2 cup sliced green onion 1/4 cup hoison sauce 1 cup broth 2 tablespoons honey 1 tablespoon cornstarch 1 tablespoon soy sauce 1 teaspoon grated fresh ginger OR 1/4 teaspoon ginger powder 1/4 teaspoon cayenne pepper 1/4 teaspoon curry powder 8 ounces packaged spaghettini pasta 1 Cook pasta according to package directions. Drain. 2 Heat oil in a large wok or saute pan. Stir fry mushrooms, carrots, peppers, onion, and garlic until tender. Stir in bean sprouts and green onion; cook one minute. Stir cornstarch into chicken broth, and add to stir fry. Stir in hoison sauce, honey, soy sauce, ginger, cayenne pepper, and curry powder. Cook and stir until thickened and bubbly. 3 Add cooked spaghetti, and toss. Heat through.
