Guest guest Posted May 3, 1999 Report Share Posted May 3, 1999 * Exported from MasterCook * Peasant Soup Recipe By : Taste Of Home Annual Recipes 1999 Serving Size : 6 Preparation Time :0:00 Categories : Beans Soups Taste Of Home Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound dry great northern beans 3 carrots -- sliced 3 ribs celery -- sliced 2 medium onions -- chopped 2 bay leaves 1 can {14 1/2 oz.} tomatoes -- undrained & chopped 1 teaspoon dried basil 1/2 teaspoon pepper 2 tablespoons olive or vegetable oil Place the beans in a Dutch oven and cover with water; bring to a boil. Boil for 2 minutes. Remove from the heat; cover and let stand for 1 hour. Drain and rinse beans; return to the Dutch oven. Add 6 cups of water, carrots, celery, onions, garlic, bay leaves, tomatoes, basil, and pepper; bring to a boil. Reduce heat; cover and simmer for 1 1/2 hours or until the beans are tender.
