Guest guest Posted May 3, 1999 Report Share Posted May 3, 1999 * Exported from MasterCook * Asparagus Cheese Soup Recipe By : Taste Of Home Annual Recipes 1999 Serving Size : 6 Preparation Time :0:00 Categories : Asparagus Soups Taste Of Home Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/4 cup butter or margarine 1/4 cup all-purpose flour 2 teaspoons salt 1/8 teaspoon pepper 6 cups milk 4 cups cut fresh asparagus {1-inch pieces} -- cooked and drained [or 2 (10 oz.) pkgs. frozen cut asparagus] 3 cups shredded Cheddar cheese 4 teaspoons minced fresh thyme [or 1 1/2 teaspoons dried thyme] Additional shredded Cheddar cheese -- optional In a 3-quart saucepan, melt the butter. Stir in flour, salt, and pepper until smooth. Gradually add milk and bring to a boil. Boil and stir for 2 minutes. Add asparagus and heat through. Add the cheese, thyme, and nutmeg. Cook until cheese is melted, stirring frequently. DO NOT BOIL.
