Guest guest Posted May 3, 1999 Report Share Posted May 3, 1999 * Exported from MasterCook II * Low Fat Vegetarian Burrito Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Beans Mexican Vegetarian Chili Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 Cup Black Beans 1 Cup Pinto Beans 6 Cups Water 1 Bay Leaf 1 Onion -- chopped 3 Large Tomatoes -- chopped 1 Cup Cooked Brown Rice 1 Cup Green Peppers -- diced 1 Cup Corn 1 Tablespoon Garlic -- minced 2 Teaspoons Ground Cumin 1/8 Teaspoon Chili Pepper Flakes Corn Tortillas Soak beans overnight. Drain and place in a large saucepan with fresh water and bay leaf. Bring to boil, reduce heat and simmer about 1 hour until tender. Add the tomatoes, onion, corn, garlic, cumin and chili pepper flakes. Simmer for 15 minutes. Mix with rice. Season to taste with salt and pepper. Place generous serving on tortilla and roll up. - - - - - - - - - - - - - - - - - - NOTES : Be sure to remove bay leaf before serving.
