Guest guest Posted May 4, 1999 Report Share Posted May 4, 1999 * Exported from MasterCook II * Tempeh Tamale Pie Recipe By : Catherine Leslie Serving Size : 6 Preparation Time :0:00 Categories : Mexican Tempeh Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 Lb Tempeh -- cubed 1/2 Tbs Jalapeno Pepper -- minced 1 Large Onion -- chopped 3 8 Oz Cans Tomato Sauce 1 Tbs Chili Powder 1 Tsp Ground Cumin 1 1/2 Cups Corn 1/4 Tsp Black Pepper 1/2 Green Bell Pepper -- chopped 3/4 Cup Cornmeal 2 Tsp Baking Powder 1 Egg 1 Tbs Vegetable Oil 1/2 Cup Skim Milk Preheat oven to 400 degrees. Brown tempeh, jalapeno pepper and onion in a Dutch oven that has been lightly sprayed with veg oil spray. Add tomato sauce, chili powder, cumin, corn, black pepper and green pepper. Simmer for 10 minutes. Combine cornmeal, baking powder, egg <or egg replacer>, oil and milk and mix well. Place tempeh mixture in a 2 quart oven proof casserole dish which has been lightly sprayed with veg oil spray. Pour cornbread topping mixture evenly over the tempeh mixture.
