Guest guest Posted May 4, 1999 Report Share Posted May 4, 1999 * Exported from MasterCook II * Cilantro & Pumpkin Seed Pesto Recipe By : Eating Well May/June '97 Serving Size : 1 Preparation Time :0:00 Categories : Mexican Sauce Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/3 Cup Hulled Pumpkin Seeds 2 Jalapeno Peppers, Quartered -- seeded 1 Cup Fresh Cilantro Leaves 1/4 Cup Reduced Fat Sour Cream 1 Tsp Fresh Lime Juice Salt To Taste In a small heavy skillet over medium heat, lightly toast pumpkin seeds, about 2 minutes. Place in a bender or food processor; add jalapenos, cilantro, sour cream and lime juice. Blend until smooth. Season with salt. Makes about 2/3 cup.
