Hannah MMMMM----- Recipe via Meal-Master v8.06 Title: Hot Tamale Pie Categories: Casserole, Mexican Yield: 4 Servings 1 c Tomatoes, chopped 1 c Tomato sauce 1 c Cornmeal 3 c Water 1 c Corn 1 c Pinto beans (cooked) 1/2 c Red and green pepper chopped 1 Medium onion chopped 1/2 ts Cumin Salt and pepper to tast Pinch of cayenne Dash of chili powder 1 tb Prepared mustard 1 tb Lemon juice 3 Cloves of garlic, minced 1 tb Vegetable or olive oil In a good sized pan or large sauce pan, heat the cumin in a little bit of oil until slightly brown. Add the onion and pepper and garlic and cook until fragrant. Add tomatoes, tomato sauce, corn, pinto beans and spices and heat through. While this is the bean mixture is simmering, put the water and cornmeal in a sauce pan and heat at medium to high temperature. It will heat up and thicken quite quickly. Add the mustard and lemon juice. Stir continuously until thickened. Put the bean mixture in a casserole dish and top with cornmeal mixture. Bake in preheated, 375 degree oven for about 20-30 minutes. variations: i also like to mix the beans, like adding kidney or black beans to the recipe. Enjoy!
