(I might use a lower fat cheese or that wonderful new one I found at Trader Joes, " Yogurt Cheese " , 99.9 percent cholesterol free. Can't get enuf of that stuff!) Brenda Adams * Exported from MasterCook Buster * Oven Eggs Florentine (William Page Inn) Recipe By : The William Page Inn, Annapolis, Maryland Serving Size : 12 Preparation Time : Categories : Eggs Inn Breakfast Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 18 eggs 2 cups small-curd cottage cheese 12 cups biscuit mix -- like Bisquick 1 cup Montery Jack cheese -- shredded 1 cup Colby cheese -- shredded 2 ripe plum tomatoes 1 cup spinach -- freshly chopped 3 green onions -- finely chopped 1/4 cup butter -- melted (1/2 stick) Preheat the oven to 350 degrees F. In a large bowl of an electric mixer, blend the eggs, cottage cheese, biscuit mix, and Monterey and Colby cheeses. Mix at medium speed for 5 to 6 minutes. Add the tomatoes, the spinach, and the onions. Add the butter and mix by hand until blended. Pour the egg mixture into a dish 9 x 13 inches that has been coated with nonstick cooking oil spray. Bake for 50 to 60 minutes, or until set but still moist. Remove from the heat and cool for 10 minutes. Cut into twelve 3-inch squares. Serve on a plate with garnish of your choice.
