Guest guest Posted May 6, 1999 Report Share Posted May 6, 1999 Buster has placed only 1 MasterCook recipe in this file: Lasagne With Zucchini -------------------------- * Exported from MasterCook Buster * Lasagne With Zucchini Recipe By : FROM LHJ ONLINE http://www.lhj.com Serving Size : 8 Preparation Time : Categories : Lasagne Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 large zucchini -- sliced thin Salt Freshly ground pepper 1 container -- (15 oz.) part-skim -- ricotta cheese 1/4 cup plus 2 tablespoons freshly grated -- divided -- Parmesan cheese 2 tablespoons chopped fresh parsley 9 dry no-boil lasagne noodles* -- (5 oz.) or 8 ounces -- fresh lasagne 8 ounces part-skim mozzarella -- shredded, divided Green salad -- (optional) Crusty bread -- (optional) TOMATO SAUCE 3/4 cup finely chopped onion 1 tablespoon olive oil 2 teaspoons minced garlic 1/4 teaspoon red pepper flakes 1/8 teaspoon thyme 1 can whole tomatoes -- (35 oz.) 1/2 teaspoon salt 1. Sprinkle zucchini lightly with salt and pepper. Place in a 13x9-inch microwaveproof casserole with 2 tablespoons water. Cover and microwave on High 4 minutes, stirring halfway through. Let stand 2 minutes. Pat zucchini dry. Combine ricotta, 1/4 cup Parmesan, the parsley, 1/4 teaspoon salt and 1/4 teaspoon pepper in large bowl; set aside. 2. Make Tomato Sauce: Combine onion, oil, garlic, red pepper flakes and thyme in 2-quart microwaveproof bowl. Cover and microwave on High 4 minutes, stirring once. Add tomatoes, stirring to break them up. Microwave, covered, 8 minutes, stirring halfway through. Stir in salt. 3. Spread 1 cup sauce in bottom of 13x9-inch casserole. Cover with 3 noodles. (Be careful that noodles do not touch outside edges of dish.) Spread 1 more cup sauce over noodles to cover. Spoon half the ricotta mixture on top then sprinkle with one third of the mozzarella and half the zucchini slices. Repeat with another noodle layer, 1 more cup sauce, remaining ricotta, another third of the mozzarella and remaining zucchini. Top with remaining noodles and sauce; sprinkle with remaining 2 tablespoons Parmesan. Cover dish; microwave on High 17 minutes, rotating every 5 minutes. Sprinkle with remaining mozzarella and microwave uncovered 30 seconds. Let stand covered 5 minutes. Serve with green salad and crusty bread, if desired. Makes 8 servings. *No-boil lasagne noodles can be found in most supermarkets or from the Shade Pasta Company, 800-662-6451.
