2 pounds baking potatoes -- peeled and shredded

1/2 cup finely chopped onion

1 teaspoon salt

1/2 teaspoon pepper

2 tablespoons butter or margarine -- melted

2 tablespoons vegetable oil

 

1. Heat oven to 400 degrees.

2. Toss potatoes with onion, salt, and pepper in large bowl. Pour butter an

oil into rectangular pan, 13 x 9 x 2-inches; add potato mixture. Bake 20 to

25 minutes, turning once, until golden brown.
