Asparagus with Lemon Butter

1/2 cup water

18 medium asparagus -- bottoms snapped

1 tablespoon butter or margarine

1 tablespoon fresh lemon juice

Pinch salt

 

1. In a large skillet, bring the water to a boil. Add the asparagus; cook,

covered, about 4 minutes or to desired doneness; drain.

2. Return the asparagus to the skillet and add the butter or margarine; cook

over medium heat, tossing until butter or margarine melts. Add the lemon

juice and salt; toss.

 

VARIATION: Green Beans with Lemon Butter---Substitute 3 cups whole green

beans for the asparagus.
