Guest guest Posted May 7, 1999 Report Share Posted May 7, 1999 This dressing might go well with pasta salads, too. * Exported from MasterCook * Creamy Lemon-Herb Dressing Recipe By : Martha Stewart Living Magazine Serving Size : 24 Preparation Time :0:30 Categories : Tofu Salads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 teaspoons grated lemon zest 1 tablespoon freshly squeezed lemon juice 2 tablespoons minced chives 1 tablespoon chopped fresh basil 2 tablespoons chopped fresh dill 1 tablespoon chopped fresh tarragon 8 ounces silken tofu 1 tablespoon dijon mustard 1 tablespoon white wine vinegar 1/2 teaspoon salt -- or to taste 1/4 teaspoon pepper -- or to taste Place all ingredients in food processor; process until smooth and creamy. Add additional salt and pepper if desired. Per (1-tablespoon) serving: 8 calories (48 percent from fat), 1 gram total fat (no saturated fat), no cholesterol, less than 1 gram carbohydrates, 1 gram protein, 53 milligrams sodium, no dietary fiber.
