Guest guest Posted May 10, 1999 Report Share Posted May 10, 1999 * Exported from MasterCook * Asparagus and Tomato Pasta Salad Recipe By : Cooking Light (recipe card) Serving Size : 6 Preparation Time :0:00 Categories : Pasta & Pasta Sauces Salads & Dressings Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups asparagus (about 1 pound) -- diagnonally sliced 1/3 cup orange juice 3 tablespoons white wine vinegar 2 tablespoons water 1 tablespoon olive oil 2 teaspoons Dijon mustard 1/4 teaspoon freshly ground pepper 1/8 teaspoon salt 2 cups cooked small seashell macaroni 1 1/2 cups cherry tomatoes -- quartered 1 cup yellow bell pepper -- diced 1/2 cup kalamata olives -- chopped 1/4 cup green onions -- thinly sliced 2 tablespoons capers Steam asparagus covered, 2 minutes, drain, and set aside. Combine orange juice and next 6 ingredients (orange juice through salt) in a large bowl; stir well with a wire whisk.
