Stewed Zucchini and Tomatoes

Vegetarian Zucchini

 

 

Amount Measure Ingredient -- Preparation Method

3 tablespoons vegetable oil

3 cloves garlic -- finely chopped

1 medium onion -- coarsely chopped

3 tomatoes -- seeded and coarsely chopped

3 medium zucchini -- sliced into rounds

1 1/2 teaspoons salt

1/2 teaspoon pepper

1 teaspoon dried oregano

1 teaspoon dried basil

 

In a large saucepan, heat oil; saute the garlic and onion until tender. Add

the tomatoes and continue cooking until tomatoes soften, about 5 to 10

minutes. Add the remaining ingredients and cook for 15 to 20 minutes more or

until zucchini is soft. Serve immediately.
