Guest guest Posted May 12, 1999 Report Share Posted May 12, 1999 Posted by: C.J. * Exported from MasterCook * Garden Spiral Primavera Recipe By :Southern Living 1991 Annual Recipes Serving Size : 4 Preparation Time :0:00 Categories : Broccoli Corkscrew Pasta Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 8 ounces vegetable-flavored corkscrew macaroni -- uncooked 2 tablespoons olive oil 1/4 cup butter or margarine 1 small onion -- thinly sliced 1 clove garlic -- minced 1 1/2 cups broccoli flowerets 1 carrot -- peeled and sliced 4 ounces fresh mushrooms -- sliced 3 tablespoons white wine 1/2 teaspoon dried whole basil---or 1 1/2 teaspoons chopped fresh basil 1/2 teaspoon dried parsley flakes---or 1 1/2 teaspoons chopped fresh parsley 1/4 teaspoon white pepper 1/2 cup grated Parmesan cheese Cook macaroni according to package directions; drain. Heat olive oil and butter in a large skillet; add onion and garlic. Cook over medium heat 2 minutes, stirring frequently. Add broccoli and carrot; cook 2 minutes. Add mushrooms, and cook 1 minute, stirring occasionally. Add wine, basil, parsley, and pepper; bring to a boil. Cover, reduce heat, and simmer 3 minutes or until vegetables are tender. Add vegetables and Parmesan cheese to pasta, stirring well.
