Vegetable Noodle Casserole

Amount Measure Ingredient -- Preparation Method

4 ounces egg noodles -- uncooked

1 stalk celery -- sliced

1 small onion -- chopped

1 small green bell pepper -- chopped

1 cup coarsely chopped fresh broccoli

2 tablespoons vegetable oil

1/2 cup milk

1/4 teaspoon salt

1/4 teaspoon pepper

1 1/2 cups shredded Monterey Jack cheese

3 tablespoons fine dry bread crumbs

1 tablespoon butter or margarine -- melted

 

Cook noodles according to package directions; drain and set aside.

Saute celery, onion, green bell pepper, and broccoli in oil until

tender. Stir in milk and next 3 ingredients. Add noodles, and spoon into a

lightly greased 1 1/2-quart baking dish. Cover and bake at 350 degrees for 15

minutes. Sprinkle with bread crumbs and drizzle with butter. Bake, uncovered,

10 minutes.
