I LOVE TO COOK FAT FREE! nothing is more fun than to take most recipes and to re-make them to fit our fat free lifestyle. my husband's bypass surgery and family history of heart disease gave me ALL the incentive that i need to be adventuresome with fat free recipes and to create some of my own. that was 5 years ago and he is doing wonderfully....exercise, fat free diet, and change in lifestyle (stress). we are not vegetarians per se....but we live very nicely without red meat and meat of any kind. we do eat some heart healthy fish for special occasions... i am not sure that i understand all the " no's " about the vegetarian diet...so i don't know if milk products are allowed...i see cheese in some of the recipes...so if i goofed with this recipe, please forgive the oversight. i am sure, with your knowledge, you could use rice or soy milk or other source of blend able liquid to produce the " creamy sauce " .... we LOVE pasta, ALL veggies, grains and legumes and eat them primarily. i am looking for crock pot recipes, one pot/pan dishes, casseroles, soups, bean, grains dishes even pasta! i am submitting on of our favorite pasta dishes to the group and hope that if everyone likes it i will gladly send others in the future. i am so glad that i found this list and will look forward to hearing and seeing more posts in the future. thanks....keep up the great digest please.... FETTUCCINE WITH CREAMY MUSHROOM SAUCE (quick easy and serves 4-6 nicely) 12 oz fettuccine 1/4 cup water 1 1/2 tsp. crushed garlic 2/3 cups diced onions 3 1/2 cups sliced mushrooms (oyster, portobello, shiitake, white or brown mushrooms) 6 tbs. sweet wine (port or marsala) 6 tbs. non-fat vegetable broth 1 1/2 cups of non-fat OR low-fat evaporated milk (NOT condensed!) 5 tsp. flour 1/3 cup finely chopped chives or green onion tops 1. cook pasta in boiling water according to package instructions. do NOT over cook, should be slightly al dente (not soft) drain and set aside. 2. in large non-stick skillet, heat water and sauté' garlic and onions until soft, approx. 5 minutes. add wine and cook until reduced another 3-5 minutes. add mushrooms and continue to sauté' until mushroom are soft and tender. 3. meanwhile, in small bowl, combine broth, milk and flour, mixing until dissolved. add this mixture to the skillet and continue to stir often. (sauce may curdle initially, but continue to stir and simmer until thickened) 4. add the cooked fettuccine to sauce and toss until pasta is heated through. 5. top with chopped chives/green onion tops p.s. if a " sweet " sauce is not desired, try using a dry white wine or even a red wine! you can prepare this sauce earlier and just reheat it when needed. you may have to add a little milk if sauce is too thick! now, enjoy with someone you love! your heart will love you for it! 364 calories per serving based on 6 servings 1 grams of fat total based on 6 servings 2 mg cholesterol based on 6 servings -- We can do no great things- only small things with GREAT love.
