Guest guest Posted May 13, 1999 Report Share Posted May 13, 1999 * Exported from MasterCook * Angel Hair Pasta w/Lemon & Garlic Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Pasta Vegan Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 teaspoon olive oil 2 cloves garlic -- minced 1/2 cup dry white wine 1/4 cup freshly squeezed lemon juice 1 cup tomato -- chopped 4 ounces dried spinach angel hair pasta 4 ounces dried semolina angel hair pasta 1/4 cup fresh basil -- chopped 2 tablespoons freshly grated Parmesan cheese (optional) freshly ground pepper to taste Bring a large pot of water to a boil over high heat and maintain at a boil. Put olive oil and garlic in a saute pan and cook over medium heat just until garlic begins to brown. Remove the saute pan from the heat and pour in the wine. Return to heat and cook another 1-2 minutes, until the wine has been reduced by half. Stir in lemon juice and tomato. Remove from heat. Place pasta in boiling water and cook to desired doneness, about 30 seconds to 1 minute. Drain pasta and put in a warm serving bowl. Add basil, Parmesan cheese, and pepper along with the tomato mixture.
