Spicy Tofu, Cheese, and Green Chile Enchiladas

Amount Measure Ingredient -- Preparation Method

1 10.5 ounce package extra-firm light tofu -- cut into small cubes

1/2 cup shredded Mozzarella cheese

1 4.5 ounce can chopped green chiles

1/4 cup taco sauce

6 7 or 8-inch flour tortillas

1 10-ounce can enchilada sauce

2 tablespoons sliced ripe olives -- if desired

 

1. Heat oven to 425 degrees. Spray 13 x 9-inch {3-quart} baking dish with

nonstick cooking spray. In medium bowl, combine tofu, cheese, chiles, and

taco sauce; mash and mix until well combined. Spoon mixture evenly onto

tortillas; roll up. Place seam side down in sprayed baking dish. Top with

enchilada sauce.

2. Bake at 425 degrees for 15 to 20 minutes or until bubbly and lightly

browned. Sprinkle with olives, if desired.
