Guest guest Posted May 14, 1999 Report Share Posted May 14, 1999 * Exported from MasterCook * Bowtie Pasta-And- Black Bean Salad Recipe By : Vegetarian Times website, Jan. 1999 Serving Size : 4 Preparation Time :0:00 Categories : Salads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 8 ounces bowtie pasta -- (farfalle) 1/4 cup balsamic dressing -- (recipe follows), up -- to 1/2 5 1/2 cups cooked black beans -- or 14-oz. can black -- beans, drained 1 large red bell pepper -- cut into chunks 6 kalamata olives -- pitted and thinly -- sliced, up to 12 1 tablespoon drained and minced capers salt -- (optional) chili oil -- (optional) chopped basil -- chopped parsley, or -- a mixture of both -- for garnish Cook and drain pasta according to package directions. Plunge into cold water to stop cooking. Add 1/4 cup of dressing; toss well. Add black beans, bell pepper, olives and capers. Before serving, stir in remaining dressing to taste. Add salt and sprinkle with chili oil if desired. Garnish with basil and parsley. Makes 4 servings. Per Serving: 412 Cal.; 14g Prot.; 12g Fat; 63g Carb.; 0 Chol.; 495mg Sod.; 8g Fiber.
