Guest guest Posted May 14, 1999 Report Share Posted May 14, 1999 * Exported from MasterCook * Quick Vegetable Stew Recipe By : Serving Size : 0 Preparation Time :0:00 Categories : Soups & Stews Quick & Easy Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 tbsp olive oil 2 onions -- chopped 1 jalapeño -- seeded and minced 1 tsp. ground cumin 1 tsp. dried marjoram 1 tsp. dried coriander 2 cups fresh green beans -- cut in 1-inch pieces (thaw if using frozen) 1 zucchini or yellow squash -- sliced 1 can tomatoes (or 3 cups fresh -- (28 ounce) peeled, with juice) Sauté the onions and pepper in olive oil about 5 minutes, until onions begin to soften. Add the spices and green beans and sauté another 3 to 4 minutes. Add the zucchini and tomatoes, cover, and simmer for 15 to 20 minutes, until vegetables are tender.
