Fresh Pasta with Skinny Tomato Sauce

Amount Measure Ingredient -- Preparation Method

1 medium onion -- finely chopped

1 clove garlic -- minced

2 tablespoons water

2 9-ounce packages refrigerated linguine

1 28-ounce can crusted tomatoes with Italian herbs -- undrained

1 tablespoon olive oil

2 teaspoons sugar

1/4 teaspoon salt

1/4 teaspoon freshly ground black pepper

1 bay leaf

 

1. In nonstick Dutch oven or large saucepan, combine onion, garlic, and

water. Bring to a boil. Reduce heat to low; cover and cook 10 minutes or

until onion is tender and translucent, stirring occasionally and adding

additional water if necessary to prevent scorching.

2. Meanwhile, cook linguine to desired doneness as directed on package.

3. Add all remaining ingredients except linguine to onion mixture. Bring to a

boil. Reduce heat; cover and simmer 10 minutes to blend flavors.

4. Drain linguine. Remove and discard bay leaf from sauce. Serve sauce over

linguine.
