Mocha Cheesecake Light

3/4 cup graham cracker crumbs

1/4 cup sugar

3 tablespoons unsweetened cocoa

1 large egg white -- beaten

FILLING

1 1/2 cups nonfat plain yogurt

1 tablespoon instant espresso powder

1/4 cup hot water

1 package Neufchatel cream cheese -- softened (8 oz.)

1 package nonfat cream cheese -- softened (8 oz.)

3/4 cup sugar

2 large eggs

3 large egg whites

1/4 cup all-purpose flour

1 teaspoon vanilla extract

Chocolate curls -- for garnish

 

Our heavenly version has only half the calories of this ordinarily

sinfully-rich dessert.

 

Prep time: 25 minutes plus chilling Baking time: 50 to 55 minutes Degree of

difficulty: easy Low-fat Low-calorie

 

1. Heat oven to 350 degrees. Lightly coat a 9-inch springform pan with

vegetable cooking spray.

 

2. Make crust: combine graham cracker crumbs, sugar, cocoa and egg white in

bowl; pat over bottom of pan. Bake 8 minutes; cool.

 

3. Reduce oven to 325 degrees.

 

4. Make filling: meanwhile, drain yogurt in strainer lined with coffee

filter over bowl, 30 minutes. Dissolve espresso powder in water. beat

neufchatel cream cheese and nonfat cream cheese on medium speed until

smooth. beat in sugar; add eggs and egg whites, 1 at a time, just until

blended. Beat in yogurt, espresso, flour and vanilla extract.

 

5. Wrap outside of springform pan with heavy-duty foil. Pour filling over

crust and place in roasting pan; add enough hot water to come 1 inch up side

of cheesecake. Bake 50 to 55 minutes until center is just set.

 

6. Cool cheesecake in water bath. remove; discard foil. cover and

refrigerate overnight. remove sides of pan. Garnish with chocolate curls,

if desired. Makes 12 servings.
