Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 ripe papayas 3 medium tomatoes 1/3 cup chopped red onion 1/4 cup chopped scallions 1/4 cup chopped fresh cilantro 3 tablespoons fresh lime juice Peel papaya and cut into 1 " cubes. Cut tomatoes into halves, gently squeeze to remove water and seeds. Cut seeded tomatoes into 1 " cubes. Toss with remaining ingredients.
