Here are several " not meatballs " for Sue. All are not necessarily vegan, but

can easily be made so -- use soy milk in place of any milk, and use Egg Replacer

or tofu in place of any eggs.

Karen Sonnessa had some good " not meatball " recipes too, which I *thought* I

had, but can't find now. They were from Veg Times (I think they were New York

Mama's and California Mama's " Not Meatballs " or something like that). Karen --

could you post them so I can get them again -- they've disappeared from my

cookbooks! Thanks!

Barbecue Not-Meatballs

Amount Measure Ingredient -- Preparation Method

1 cup ketchup

1/4 cup brown sugar

1/4 cup red wine vinegar

1/2 cup water

1 1/2 pounds Morningstar Farms Burger-Style

Recipe Crumbles

1 tablespoon minced onion flakes

1/4 teaspoon garlic powder

1/2 cup milk (whole, skim, soy, etc.)

3/4 cup multi-grain oatmeal

1/8 teaspoon freshly ground pepper

vegetable cooking spray

 

In a small bowl, combine ketchup, brown sugar, vinegar, and water; blend

until smooth and set aside. Preheat oven to 350°. Lightly spray a 10-inch baking

dish with nonfat cooking spray.

In a medium bowl, combine " beef crumbles " , onion flakes, garlic powder,

milk, pepper, and oatmeal. blend well and shape mixture into small balls.

Lightly spray a nonstick skillet with cooking spray and heat over medium-high

heat. Place " not meatballs " in skillet and brown on all sides. Turn carefully

with a slotted spoon.

Place " not meatballs " in prepared baking dish. Cover with barbecue sauce

and ake in preheated oven for 1 hour, until bubbly.

NOTES : " Not-meatballs " and sauce can be prepared ahead of time, if desired, and

baked before serving.

Falafel Balls in Spicy Tomato Sauce

Amount Measure Ingredient -- Preparation Method

1 28 oz can crushed tomatoes

1 cup vegetable broth

1 small onion -- chopped

1 jalapeno chili -- seeded and minced

1 teaspoon paprika

1/2 teaspoon salt

1/2 teaspoon pepper

1 1/3 cups falafel mix

6 ounces soft tofu -- drained and mashed

1/2 cup water

1/2 cup chopped parsley -- plus for garnish

1 egg -- beaten

1 tablespoon vegetable oil

 

For sauce: Combine first 6 ingredients in large, heavy pot; bring to a

boil. Simmer uncovered for 15 minutes, stirring occasionally.

 

For falafel balls: Preheat oven to 475 degrees. In medium bowl, mix

falafel mix, tofu, water, parsley and egg with hands. Form into 1 "

balls. Place on lightly oiled baking sheet; bake for 8-10 minutes. Do

not overcook or falafel will dry out.

 

When sauce is done, carefully loosen falafel from baking sheet and drop

into simmering sauce. To serve, garnish with parsley. Makes 6 servings,

7 grams of fat per serving.

Meatless Balls

Amount Measure Ingredient -- Preparation Method

1 pound vegetable burgers

1/4 cup breadcrumbs

salt & pepper to taste

2 tablespoons butter or margarine

1 large onion -- chopped

1 cup milk

1 egg -- beaten

1 tablespoon fresh parsley -- chopped

1 tablespoon soy sauce

vegetable oil for frying

 

Crumble the burgers into a mixing bowl and use your fingers to work in

the breadcrumbs, salt and pepper. Set aside.

 

Melt the butter in a frying pan and saute the onion until transparent.

 

Mix the milk and egg together and add, with the parsley and soy sauce,

to the dry mix. Stir well. Add the onion saute. Stir thoroughly and

shape into 24 small balls.

 

Fry until well browned all over.

Spaghetti w/Not Meatballs

3/4 pound Morningstar Farms Burger-Style

Recipe Crumbles

2 teaspoons onion flakes

1/4 cup Parmesan cheese

1/2 teaspoon Italian seasoning

1/4 teaspoon garlic powder

6 ounces spaghetti

2 1/2 cups spaghetti sauce

 

Preheat broiler. Lightly spray baking sheet or broiler pan with cooking

spray.

In a medium bowl, combine beef crumbles, onons, Parmesan cheese, Italian

seasoning, and garlic powder, and mix well. Shape mixture into 15 to 20 balls

and place on prepared baking sheet. Broil for 10 to 12 minutes until browned on

all sides (turn frequently during cooking).

Cook pasta according to package directions; drain and keep warm.

Heat pasta sauce. Add cooked " not meatballs " to sauce; reduce heat to

medium, and cook for 5 to 10 minutes.

Place pasta on a large platter and top with " not-meatball pasta sauce " .

Sprinkle with extra Parmesan cheese if desired.

Tasty Not-Meatballs

1 24 oz can Vegeburger

2 1/4 cups bread crumbs

2 cups finely chopped onion

3 cups finely chopped walnuts or pecans

2 tablespoons egg replacer

1 19 oz pkg tofu -- drained & mashed

1 teaspoon garlic powder

1 tablespoon soy sauce

1/4 teaspoon liquid smoke flavoring

SAUCE:

1/4 cup oil

1/4 cup dried chopped onion

1/4 cup packed brown sugar

1/2 cup lemon juice

1 1/2 cups apricot jam or grape jelly

1 cup barbecue sauce

1 teaspoon oregano

 

Mix all " not meatball " ingredients. Form into small (1 " diameter) balls.

Place on parchment paper on sheet pan or spray pan with vegetable cooking spray.

Bake at 350 degrees F or until set but not dried out.

SAUCE: Mix all ingredients. Pour over meatballs; cover. Bake 30 minutes

at 350 degrees F. Bake uncovered last 10 minutes.

***VEGETABLE BALLS***

1 1/2 cups grated raw potatoes

1 1/2 cups grated raw cauliflower

1 cup garbanzo bean flour

2 tablespoons chopped parsley or chives

1 teaspoon salt or to taste

1/4 teaspoon asafetida -- (optional)

1/2 teaspoon freshly ground black pepper

1 teaspoon each: paprika -- coriander, and

-- tumeric

Vegetable oil for saut‚ing

***SPICY TOMATO SAUCE***

3 cloves garlic -- minced

1/2 cup chopped onion

1 tablespoon vegetable oil or ghee

1/4 teaspoon fenugreek seeds

1 teaspoon fennel seeds

2 teaspoons each; ground ginger -- coriander, and

-- cumin

1 teaspoon -- paprika and freshly

-- ground black pepper

1 pinch red Chile powder

2 cups crushed tomatoes

1/2 cup water

1 teaspoon Sugar

Salt to taste

2/3 cup plain yogurt -- (optional)

 

1. In a large bowl, combine all ingredients for vegetable balls, except oil.

Mix thoroughly. Form mixture into 30 small balls and refrigerate while

preparing sauce. 2. In a medium skillet over medium heat, saut‚ garlic and

onion in oil or ghee until golden, about 4 minutes. Add fenugreek and fennel

seeds, and saut‚ for 2 minutes. Add ginger, coriander, cumin, paprika, pepper,

and chile powder. Saut‚ for 1 minute. Add tomatoes, water, sugar, and salt.

Cook over low heat for 15 to 20 minutes, stirring occasionally. 3. Heat a

large skillet over medium heat and add enough oil to coat bottom of pan. Saut‚

vegetable balls until golden brown on all sides, turning frequently. Drain well

on paper towels and keep warm. 4. Just before serving, stir yogurt into sauce,

if desired. Pour sauce over vegetable halls and serve hot.
